Fresh Limes Granulated Sugar Salted Butter Eggs
In a medium-sized pot, heat the butter, sugar and lime juice until the butter is melted and the sugar is dissolved.
In a medium-size bowl, whisk the eggs until smooth. Next, slowly drizzle the heated butter and lime juice into the eggs while whisking continuously.
Return the mixture to the pot and heat over medium heat, while stirring, until it is thickened and coats the back of a spoon.
Pour the lime curd into mason jars and place in the refrigerator to cool and set. Then use as desired in your favourite desserts.
