Delicious clusters of cashews and gooey caramel enrobed in sweet, decadent chocolate. These cashew turtles come together with just a few simple ingredients and are ready in less than an hour.

Cashews, roasted or raw Soft caramels Chocolate melting wafers Heavy cream
Arrange the cashews
Line a baking sheet with a silicone liner or parchment paper. Arrange the cashews in one tablespoon piles leaving a bit of space between them.
Melt the caramel
Place the caramels in a bowl along with the cream. Melt over a simmering pot on the stove, or in the microwave, until it is smooth and has a honey-like consistency.
Coat the nuts in caramel
Drizzle the melted caramel over the cashew clusters. Place the tray in a cool place, like your fridge or freezer, for a few minutes to allow the caramel to firm up.
MElt the chocolate
Place the chocolate in a bowl and heat over a double boiler or in the microwave until it's melted and smooth.
Coat the turtles in chocolate and decorate
Drizzle chocolate over the caramel-coated nuts, or dip them in the melted chocolate to fully enrobe them. While the chocolate is still tacky, decorate with salt, chopped nuts or candy sprinkles.
