Orange Jello Poke Cake

Orange poke cake is a light, refreshing dessert.  Made with vanilla cake, filled with orange jello, and finished with vanilla whipped topping, it is ideal for any occasion.  It comes together quickly and one cake will serve 12-16 people making it perfect for large gatherings.

This light vanilla cake, with the subtle flavour of orange, is the perfect dessert when you need something quick and easy. The flavours are light and refreshing, similar to an orange creamsicle.

Bake the cake according to box directions.  Allow the cake to cool, then poke holes over the top of the cake with the end of a wooden spoon. 

Mix the jello powder with the hot water and pour it over the cake, paying attention to fill all of the holes. 

Mix milk and the vanilla pudding just until it begins to thicken, the fold in the thawed whipped topping.  Spread it over the cake.  Top with sliced mandarin oranges, orange sprinkles, or chopped nuts. 

Allow the cake to chill for at least an hour before slicing and serving. Serve as is or with vanilla ice cream, for added orange flavour serve with extra mandarin orange slices and spoon them over the cake.
