Pineapple  Poke Cake

This tasty pineapple cake is made with simple ingredients, starting with a boxed cake mix, canned pineapple and instant pudding. One cake will serve 12-16 people making it perfect for large gatherings.

Pineapple poke cake is a moist vanilla cake mixed with pineapple and filled with pineapple pudding.  Then it's topped with crushed pineapple and a fluffy whipped topping.   It is light, refreshing and perfect for summer. 

Bake the cake according to box directions, adding half a cup of crushed pineapple, and allow it to cool.  Then poke holes over the top of the cake with the end of a wooden spoon. 

Mix milk, pineapple juice, and one box of vanilla pudding.  Reserve half a cup of the pudding and then spoon the remainder over the cake, being sure to fill the holes.

Mix the remaining pineapple with the reserved pudding and spread it over the top of the cake. 

Mix the second box of pudding with one cup of milk, then fold in the whipped topping.  Spread it evenly over the cake. 

Allow the cake to chill for at least an hour before slicing and serving. Serve topped with pineapple, shredded coconut, or crushed nuts.
