This delicious eggnog cake is made with simple ingredients, starting with a boxed cake mix, eggnog and instant pudding. One cake will serve 12-16 people making it perfect for large gatherings.

Eggnog poke cake is a delicious and easy dessert perfect for the Christmas season. Made with a simple boxed cake mix, eggnog, and instant pudding it is finished with fluffy whipped topping and a dusting of cinnamon.

Bake the cake according to box directions and allow it to cool.  Then poke holes over the top of the cake with the end of a wooden spoon. 

Mix the eggnog and vanilla pudding.  Then spoon it over the cake, being sure to fill the holes. Using a small tipped piping bag is a great way to ensure the holes are filled.

Spread the whipped topping over the filled cake, then dust with cinnamon or nutmeg.

Allow the cake to chill for at least an hour to allow the pudding to set, then slice and serve.

Garnish the cake as desired.  Sugared cranberries add a festive, fun touch and the tart berries and sweet pudding are a perfect blend of flavor.
