This delicious homemade lemon curd is made with fresh lemons. It is smooth and creamy with a bright, tangy citrus flavour. It's made with only four ingredients!
Freshly squeezed lemon juice is a must. You also need butter, sugar, and eggs to make this delicious curd.
In a medium-sized pot, heat the butter, sugar and lemon juice until the butter is melted and the sugar is dissolved.
In a medium-size bowl, whisk the eggs until smooth. Next, slowly drizzle the heated butter and lemon juice into the eggs while whisking continuously.
Return the mixture to the pot and heat over medium heat. Continue to heat, while stirring, until it is thickened and coats the back of a spoon.
Pour the lemon curd into mason jars and place in the refrigerator to cool and set. Once the curd is set you can use it in your favourite dessert. It will keep for about 2 weeks.
