This tasty lemon cake is made with simple ingredients, starting with a boxed cake mix, lemon pudding and frozen whipped topping. It comes together quickly and one cake will serve 12-16 people making it perfect for large gatherings.

Lemon poke cake is a moist lemon cake that is filled with lemon pudding and finished with a fluffy whipped topping. This cake is light, refreshing, and perfect for summer. For a tangier version, use lemon curd instead!

Bake the cake according to box directions.  Allow the cake to cool, then poke holes over the top of the cake with the end of a wooden spoon. 

Mix milk and the lemon pudding, whisking just until it begins to thicken, then spoon over the cake, being sure to fill the holes.  Spread the remaining pudding over the cake. 

Mix milk and the vanilla pudding just until it begins to thicken, the fold in the thawed whipped topping.  Spread it over the cake. 

Allow the cake to chill for at least an hour before slicing and serving. Serve as is, or with vanilla ice cream, whipped cream, or tangy lemon curd.
