Crunchy toasted pecans are chopped and smothered in smooth, creamy caramel then topped with a layer of chocolate. These chocolate pecan turtle clusters are always a hit and only take about an hour to make.

Spread the pecans on a baking sheet and toast in the oven for 10-15 minutes then remove them from the oven and chop into pieces.
Make piles of pecans on a baking sheet lined with a silicone mat or parchment paper. Each pile should be about one tablespoon.
Place the caramels and heavy cream in a double boiler or microwave-safe bowl. Heat until melted and smooth, then drizzle over the pecan piles.
Place the chocolate and shortening in a double boiler or microwave-safe bowl. Heat until melted and smooth then drizzle on top of the pecans and caramel.
While the chocolate is still soft press a pecan half onto the top of each turtle, or add a sprinkle of course sea salt. Let the turtles rest in a cool place until set.
