Ingredients

  • 1 pound boneless skinless chicken breast
  • 1 tbsp olive oil
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp kosher salt or 1/4 tsp table salt

Parmesan Garlic Sauce

  • 1/2 cup butter salted or unsalted
  • 2 cloves garlic minced
  • 1/4 tsp kosher salt or 1/8 tsp table salt
  • 1 tbsp parsley flakes
  • 1/4 cup parmesan cheese grated

Instructions

  • Cut the chicken into cubes between 1/2 and 1 inch in size. Don't worry if they are not all exactly the same size.
  • Place the cubed chicken in a small bowl, drizzle with olive oil, and add the garlic powder, onion powder, and 1/2 tsp kosher salt. Toss until chicken is well coated.
  • Thread the chicken onto four skewers. The cubes should be just touching.
  • Place the skewers in a single layer in the air fryer basket. Cook at 350°F for 12-15 minutes, turning halfway through, until chicken is cooked through and lightly golden brown. While the chicken is cooking, make the sauce.
  • Once the chicken is cooked, remove it from the air fryer basket, move it to a plate, and brush it with the parmesan garlic sauce. Serve with the remaining sauce on the side.

Parmesan Garlic Sauce

  • Place the butter, garlic, 1/4 tsp of kosher salt, and dried parsley in a small saucepan.
  • Heat over medium heat until the butter is melted and the garlic is fragrant.
  • Remove from the heat and stir in the parmesan cheese.
  • Set aside until the chicken is cooked.

Notes

The size of the skewer you can use will depend on the size of your air fryer.  In my Cosori 5.8 qt, I can fit skewers between 7 and 8 inches in length.
You will probably not need all the sauce, but the extra is delicious drizzled on potatoes or as a dip for bread.  You can divide the measurements in half if you don't want a whole batch.
