In a small microwave-safe bowl, heat the chocolate for 20-second intervals stirring between intervals until melted and smooth.
Place a jujube on your dipping tool and drop it into the chocolate. Turn the jujube until it is fully coated in chocolate, then use the dipping tool to lift the jujube out of the chocolate. Tap the tool on the side of the bowl a couple of times to allow the excess chocolate to drip off, then set the coated jujube on the lined baking sheet and repeat with the remaining candy.
Allow the chocolate to fully set, then move the jujubes to an airtight container for storage.
If you want an extra thick chocolate coating, you can repeat the dipping process after the first coat has set. You will need another cup of chocolate to coat them all.
