Line a baking sheet with parchment paper or a silicone liner and set aside.
Place the melting wafers in a microwave-safe narrow jar or glass. Microwave on half-power for 20-second intervals, stirring between intervals until the chocolate is melted and smooth.
Dip a pretzel rod into the melted chocolate, then lift it out. Give it a gentle shake and allow the excess chocolate to drip off, then set it on the lined baking sheet. Repeat with remaining pretzels.
Before the chocolate has set, decorate the pretzel rods as desired with sprinkles, chopped nuts, crushed peppermint, or whatever else you like.
Allow the chocolate to be fully set, then move the pretzels to an airtight container or ziplock bag for storage.
Double Boiler Method
Add 2-3 inches of water to the bottom of a double boiler.
Add the melting wafers to the top of the double boiler.
Heat on medium-low heat, allowing the water to simmer. Stir the chocolate as it warms until melted and smooth. Then pour the chocolate into a narrow jar or drinking glass.
It is very important that you do not allow the water to boil and do not get any water in the chocolate, or it will seize.
Notes
You may need to use more or less chocolate depending on the length of the pretzel rods you use and how much you want to coat them in chocolate.As you dip the pretzels and there is less chocolate in the jar, you may want to tilt the jar and roll the pretzel in the chocolate to allow more coating.If you want an extra thick layer of chocolate, allow the first coat to harden, then dip the pretzels again. You will need twice as much chocolate if you want to double dip.To decorate with drizzles of different colours of chocolate, allow the chocolate coating to harden first, then drizzle the second colour.
