These leftover prime rib beef dip sandwiches are a quick and tasty dinner and a great way to use leftovers.  These French dip sandwiches take just 15 minutes to prepare, perfect for busy weeknights.

Ingredients

  • 2 hoagie rolls
  • 12 oz cooked prime rib
  • 1 1/2 cups gravy or au jus
  • 1 tbsp butter

  • Preheat the oven to broil while you prepare the remaining ingredients.
  • Slice the hoagie rolls in half, spread with butter, and place face-up on a baking sheet.  Set aside.
  • Pour the gravy into a medium-sized pot and heat it over medium heat. While the gravy is heating, heat a large skillet over medium heat and add the leftover roast. 
  • Let the beef heat for a few minutes, then add about 1/4 cup of gravy. Place a lid on the skillet and continue heating.
  • Place the rolls in the oven to melt the butter and toast the buns. Watch closely, as they won't take more than a few minutes. You are looking for golden brown.
  • Remove the rolls from the oven, top with beef, pour the gravy into small bowls, and serve.
