Best Ever Apple Streusel Muffins

These muffins are loaded with fresh apple and warm spices and are topped with a crunchy streusel.

Ingredients

  • 1 Cup (130g) whole wheat flour
  • 1/2 Cup (64g) all purpose flour
  • 1/2 Cup (100g) granulated sugar
  • 2 tsp (9g) baking powder
  • 1 tsp (3g) apple pie spice or cinnamon
  • 1/2 tsp 3(g) kosher salt or 1/4 tsp table salt
  • 1/3 Cup (78 ml) vegetable oil
  • 1 Large egg
  • 1/3 Cup + 2 Tbsp (108 ml) milk
  • 1 tsp (5ml) vanilla extract
  • 1 Medium apple peeled and diced (equalling 1 cup)

For the Streusel Topping

  • 2 Tbsp (20 g) all purpose flour
  • 3 Tbsp (36g) brown sugar dark or light
  • 2 Tbsp (34 g) salted butter
  • 1/2 tsp (1.5 g) ground cinnamon

Instructions

  • Preheat oven to 375 degrees.
  • Mix the flours, sugar, baking powder, salt and apple pie spice in a large bowl.
  • In a small bowl, beat the egg with the vegetable oil and then stir in the milk and vanilla.
  • Add the wet ingredients to the dry ingredients and stir just until combined.
  • Fold in the apples and then scoop the batter into a lined muffin tin.
  • In a small bowl mix the streusel ingredients with your fingers until well combined and crumbly.
  • Place a large scoop of streusel on top of each muffin.
  • Place in the oven and bake for 28-30 minunutes until golden brown and a toothpick comes out clean.
  • Cool for 10 minutes, then remove muffins from the tin and move to a cooling rack.
