Best Ever Apple Streusel Muffins

These muffins are loaded with fresh apple and warm spices and are topped with a crunchy streusel.

- 1 Cup (130g) whole wheat flour
- 1/2 Cup (64g) all purpose flour
- 1/2 Cup (100g) granulated sugar
- 2 tsp (9g) baking powder
- 1 tsp (3g) apple pie spice or cinnamon
- 1/2 tsp 3(g) kosher salt or 1/4 tsp table salt
- 1/3 Cup (78 ml) vegetable oil
- 1 Large egg
- 1/3 Cup + 2 Tbsp (108 ml) milk
- 1 tsp (5ml) vanilla extract
- 1 Medium apple peeled and diced (equalling 1 cup)
For the Streusel Topping
- 2 Tbsp (20 g) all purpose flour
- 3 Tbsp (36g) brown sugar dark or light
- 2 Tbsp (34 g) salted butter
- 1/2 tsp (1.5 g) ground cinnamon
Preheat oven to 375 degrees.
Mix the flours, sugar, baking powder, salt and apple pie spice in a large bowl.
In a small bowl, beat the egg with the vegetable oil and then stir in the milk and vanilla.
Add the wet ingredients to the dry ingredients and stir just until combined.
Fold in the apples and then scoop the batter into a lined muffin tin.
In a small bowl mix the streusel ingredients with your fingers until well combined and crumbly.
Place a large scoop of streusel on top of each muffin.
Place in the oven and bake for 28-30 minunutes until golden brown and a toothpick comes out clean.
Cool for 10 minutes, then remove muffins from the tin and move to a cooling rack.
