Air fryer cheesy boursin spaghetti squash is a quick and easy meal with whole spaghetti squash, creamy Boursin cheese, and cherry tomatoes.  This tasty, cheesy dish is a great alternative to pasta and can be served as a main meal or side dish.

Ingredients

  • 1 2-pound spaghetti squash
  • 1 tbsp olive oil
  • salt & pepper
  • 1/2 block Boursin cheese
  • 1 clove garlic minced
  • 6-8 cherry tomatoes halved
  • fresh basil
  • parmesan cheese optional

Instructions

  • Using a sharp, heavy knife, carefully cut the squash in half lengthwise.
  • Use a spoon to scrape out the seeds and stringy flesh from the middle of each squash half.
  • Brush the inside of each half with olive oil to coat the inside and edges and sprinkle with salt and pepper.
  • Place the squash cut side up in the air fryer basket. Place the basket in the air fryer and set it to 360°F. Cook the squash for 20-25 minutes until the flesh is soft but has just a bit of resistance when pierced with a fork.
  • Crumble 1/4 of the block of Boursin in each half and add the cherry tomatoes and minced garlic, and return the squash to the air fryer.
  • Set the temperature to 400°F and cook for approximately 5 minutes until the cheese is melted and bubbly. 
  • When the squash is done, remove it from the air fryer and create the long strands by dragging a fork through the length of the inside of the spaghetti squash.  Use the fork to mix the squash strands with the cheesy topping to coat them in the sauce.
    Add a sprinkle of fresh chopped basil and parmesan cheese to finish it off. 

Notes

The cooking time to achieve al dente texture will vary depending on the size of the squash, how ripe it is, and the size and power of your air fryer. Start with 20 minutes and add more time as needed.
