Curry mayo, or curry aioli, is a creamy, slightly spicy dip or spread that is delicious on burgers or sandwiches or as a dip for sweet potato fries and other appetizers

Ingredients

  • 1/2 cup mayonnaise
  • 2 1/2 tsp madras curry powder
  • 1 small clove garlic crushed
  • 2 tsp honey
  • 1 tsp lemon juice

Instructions

  • Mix all ingredients in a small bowl and stir until well blended.
  • Store in an airtight container in the refrigerator for up to 2 weeks.

Notes

This mayo can be served immediately, but allowing it to rest 30 minutes before serving will allow for an even better flavour.
Make this mayo vegan by using vegan mayonnaise and replacing honey with agave.
