What is Curry Mayonnaise?
Curry mayo is a creamy, slightly spicy condiment that works well as either a dip or spread.
Often called curry aioli, it is made with mayonnaise that has been blended with curry powder, garlic, lemon and honey. It takes about 5 minutes to prepare and has amazing flavour.
The curry powder, which is a blend of spices including cumin, turmeric, and chili, can range in spiciness from mild to hot, depending on the brand and exact spice blend.
It is an excellent condiment for grilled foods such as chicken burgers and chicken tenders, but it is also delicious as a dip for your favourite appetizers. It is frequently seen as a condiment in restaurants to go along with sweet potato fries, where the creamy, spicy dip pairs perfectly with the sweet, crispy potatoes. But we love it on almost anything.
You can even use it to replace the mayonnaise in Classic Deviled Eggs to give them a different flavor and slighly spicy kick.
Due to the fact that curry powder can have a wide range of flavour and spiciness depending on the brand or whether you are using homemade curry powder. You will want to choose one according to your spice tolerance. We love Madras Curry powder for its strong flavour and medium spice level, but there are plenty to choose from.

This easy recipe comes together with just five ingredients.
Mayonnaise – Choose your favourite brand of store-bought mayonnaise. You can use full-fat, low-fat or even fat-free mayonnaise. If you have a favourite recipe for homemade mayonnaise, you could use that as well.
Curry powder – We suggest using Madras Curry powder for this recipe due to its bold flavour and medium spice. If you don’t like a lot of spice, be sure to choose a curry powder labelled as mild. You can also use homemade curry powder if you prefer.
Garlic – This recipe uses a small, fresh garlic clove which adds to the flavour but doesn’t overpower the flavour of the curry. If you don’t have fresh garlic on hand, you can use half a teaspoon of granulated garlic instead.
Honey – This adds just a touch of sweetness to the mayo, and the flavour blends well with the spicy flavours in the curry.
Lemon juice – This adds a bit of acidity and brings all the flavours together. I highly recommend fresh lemon juice, but you can use bottled if that is all you have.
Pro-Tip: Choose a small garlic clove for this recipe. You want the garlic to add to the flavour, but not overshadow the flavour of the curry.

- Make this curry mayo vegan by choosing a vegan mayonnaise and replacing the honey with agave.
