Garlic Chive Mayo

Ingredients

  • 1/2 cup mayonnaise
  • 2 tbsp chives fresh chopped
  • 1 clove garlic
  • 2 tsp lemon juice
  • 1/4 tsp black pepper

Instructions

  • Finely chop the chives, then add to a small mixing bowl with the mayonnaise, garlic, pepper, and lemon juice.
  • Use an immersion blender to mix the ingredients by pulsing a few times.  It should be just enough to puree the garlic and chop the chives into tiny pieces, you should still see flecks of chives.
  • Give the mayonnaise a taste and adjust as needed.  Because this recipe uses fresh ingredients, their flavors can vary depending on the season, where they are grown, and how fresh they are.  If needed, you can add a pinch of salt.
  • Move to an airtight container and store in the refrigerator for up to ten days.

Notes

  • If you don't have a stick blender, you can press the garlic through a garlic press and stir the ingredients to mix
  • You can enjoy this mayo immediately, but it's even better if you let it rest for at least 30 minutes, allowing the flavors to blend
