Garlic – The recipe calls for one garlic clove, though you can add more if you like. If you find the flavor of raw garlic too potent, you can substitute garlic powder or try roasted garlic instead. If you don’t have fresh garlic, you can use a teaspoon of garlic paste or bottled minced garlic.
Chives – This mayo will taste best with fresh chives, but you can use dried chives if fresh are not available. If you have a garden full of spring onions they are a great alternative to chives.
Lemon juice – For the best flavor, I recommend fresh lemon juice, though bottled lemon juice may be substituted.
Black pepper – I always add a few twists of fresh cracked black pepper, but you can sip this if you prefer.

Making this garlic and chive mayo is super easy.
Finely chop the chives, then add the half-cup of mayo, 2 tablespoons chives, garlic, and two teaspoons of lemon juice to a small mixing bowl.
Use an immersion blender to mix the ingredients by pulsing a few times. It should be just enough to puree the garlic and chop the chives into tiny pieces; you should still see flecks of chives.
If you don’t have a stick blender, you can press the garlic through a garlic press and stir the ingredients to mix.
Give the mayonnaise a taste and adjust as needed. Because this recipe uses fresh ingredients, their flavors can vary depending on the season, where they are grown, and how fresh they are. If needed, you can add a pinch of salt.
