Air Fryer Stuffed Pork Chops

Tender, juicy pork chops stuffed with cornbread, mushrooms, apple and savoury spices. These pork chops are cooked in the air fryer in just 6 minutes. A quick and easy meal, full of flavour, that can be served any night of the week.

What Are Stuffed Pork Chops?

Stuffed pork chops are just as they sound. They are pork chops that have had a pocket sliced into them and are stuffed with a delicious filling. The stuffed pork chops are then usually baked in the oven, but we decided to use the air fryer to speed things up.

The stuffing can be made out of a variety of ingredients, such as vegetables, bacon, or cheese and usually contains some sort of bread.

These pork chops have been stuffed with cornbread, mushrooms, apple and seasoning. The stuffing is savoury with a hint of sweetness that matches perfectly with the juicy pork chops.

To keep things simple these pork chops have been made with a boxed stuffing mix which contains the cornbread and all of the spices. To make it fluffy and moist we’ve added tart Granny Smith apples, cremini mushrooms (sometimes called baby Bella mushrooms) and sautéed onions that have been cooked in chicken broth.

From start to finish these pork chops only take about 25 minutes to get to the table making them a great meal to serve any night of the week.

Why We Love This Recipe

It’s quick – From start to finish this recipe takes about 25 minutes. Because the filling is fully cooked before being stuffed in the pork chops the time in the air fryer is only about 6 minutes.

It’s easy – This recipe is super easy to pull together. Using a boxed stuffing mix saves time making the preparation easy. All you need to do is chop a few mushrooms, onion and an apple, cook them in a pan for a few minutes along with the breadcrumbs and then stuff the pork chops.

It’s delicious – These pork chops have so much flavour and by cooking them quickly in the air fryer they stay juicy and tender. The savoury spices, along with the sweet cornbread, are a perfect combination with the pork that is simply seasoned.

Ingredients

To make these stuffed pork chops you will need:

  • Boneless pork chops, about ¾ inch thick
  • 1 box (6 oz) of cornbread stuffing mix. I use Stove Top stuffing as it is easy to find and tastes great.
  • Onion
  • Cremini mushrooms (Baby Bella mushrooms)
  • Granny Smith apple
  • Chicken broth
  • Butter
  • Olive oil
  • Salt & pepper
  • Dried thyme

Pro Tip – If you can’t find the cornbread stuffing mix you can use any other flavour you like. You could also substitute with 6 ounces of dry bread crumbs and add your own favourite stuffing seasoning.

Instructions

Begin by dicing the mushroom and onion and peeling and dicing the apple.

Melt the butter in a large skillet over medium heat and add the mushrooms, apple and onion. Cook 5-7 minutes until they have softened.

Add the chicken broth and stuffing. Cook for 1-2 minutes until the stuffing mixture has fully absorbed the liquid then remove from the heat.

With a small, sharp knife cut a pocket into the side of each pork chop being careful not to cut all the way through.

Rub the pork chops with olive oil on both sides, then sprinkle with the salt, pepper and thyme.

Stuff the pork chops with about 1 cup of stuffing mixture each. Make sure to really push it in and leave some mounding out the front.

Pro Tip – Using a small, sharp knife, like a small paring knife or boning knife works best for cutting the pocket. Make sure you cut the pocket as big as you can without cutting all the way through the pork chop.

Pre-heat the air fryer at 400°F for 5 minutes then place the pork chops in a single layer in the air fryer basket.

Cook at 400°F for 6-8 minutes until cooked through.

Pork is cooked when the internal temperature reaches 145°F. If you can not tell if your pork chop is cooked you can insert a thermometer into the thickest part to make sure it has reached the correct temperature.

Serving Suggestions

Because these pork chops are filled with cornbread stuffing they are almost like a main meal and side all in one.

To make a complete meal you really only need to serve them with a salad or a few roasted veggies.

But if you are looking for something else to serve them with they go great with instant pot mashed potatoes or asparagus, or even some steamed baby potatoes.

FAQS

Can I use bone-in pork chops instead of boneless?

If you prefer to use bone-in pork chops you certainly can. You will need to add a minute or two to the cook time.

Can I prepare the pork chops ahead of time?

If you’d like to prepare these ahead of time, that is no problem. You can stuff them and store them in the refrigerator until ready to cook. Because the stuffing will be cold you will likely need to add a minute or two to the cook time.

How long does it take to cook stuffed pork chops in the air fryer?

They should be fully cooked in 6-8 minutes when cooked at 400°F. You will know they are done when a thermometer inserted through the thickest part of the stuffed pork chop reads 145°F.

  • 2 Tbsps butter
  • 6 oz cremini mushrooms (baby Bella) finely chopped
  • 1 cup diced onion
  • 1 medium Granny Smith apple peeled and diced
  • 1 cup chicken broth
  • 1 box (6oz) cornbread stuffing mix
  • 1 tablespoon olive oil
  • ½ teaspoon kosher salt
  • ½ tsp pepper freshly ground
  • ½ tsp dried thyme
  • 4 boneless pork chops ¾ inch thick

Instructions

  • In a large skillet, melt the butter over medium heat. Add the diced mushrooms, onions and apple and cook 5-7 minutes until soft.
  • Add the chicken broth and stuffing mix to to the skillet and cook 1-2 minutes until the liquid is absorbed then remove from the heat.
  • With a small, sharp knife, cut a pocket into the side of each pork chop. Try to make the pocket as large as possible without cutting all the way through the pork chop.
  • Drizzle each side of the pork chops with olive oil and sprinkle with salt, pepper and thyme.
  • Fill each pocket with approximately 1 cup of stuffing mix. Use a spoon to push the mixture into the pocket and leave some to mound out the front.
  • Pre-heat the air fryer to 400°F then place the pork chops in a single layer in the air fryer basket.
  • Cook at 400°F for 6-8 minutes until cooked through.

Notes

If you can’t tell if the pork chops are done you can use a meat thermometer.  Insert the thermometer into the thickest part of the stuffed pork chop.  Temperature should read 145°F.
Cutting the pocket in the pork chops works best with a small, sharp knife such as a paring knife or boning knife. 
If you prefer to use bone-in pork chops you can do so.  You will need to add 1-2 minutes to the cook time.
