This recipe is made with simple ingredients that can easily be customized based on what you have on hand.

Refrigerated biscuits – We use the tubes of country biscuits for this recipe, which are ten biscuits per tube. They provide a nice crust for a mini pizza. For slightly larger pizzas, you can use the grand size. Larger biscuits may need a bit of extra time to cook.

Pizza sauce – Use your favorite pizza sauce for this recipe, you can use store-bought or make a batch of homemade pizza sauce. You can also use marinara, spaghetti, BBQ sauce, or ranch dressing.

Toppings – Choose your favorite pizza toppings. Salami or pepperoni slices, Italian sausage, diced ham or cooked bacon, sliced or diced green peppers, tomatoes, or mushrooms are all great choices. Add a sprinkle of red pepper flakes or some sliced jalapenos to spice them up.

Shredded cheese – We generally use shredded mozzarella cheese, but you can use any shredded cheese you like. For this recipe, it is fine to use packaged shredded cheese. You can also add parmesan cheese for extra flavor.

Step by Step Instructions

Mini biscuit pizzas are so easy to make. This recipe is great for kids to try their hand in the kitchen. The biscuits can be flattened with a rolling pin or simply pressed out with your hand.

Flatten the biscuits with your hands or a rolling pin.

Place the flattened biscuits on a parchment-lined cookie sheet. Top with one tablespoon of pizza sauce and your toppings. If you don’t have parchment, you can use aluminum foil.

Place into a preheated oven at 400°F and bake until golden and bubbly.

This recipe also does well in a toaster oven, but you may need to work in batches due to the smaller size.

As a meal, we like to serve them with a Caesar salad. Chicken Pasta Caesar salad is a great choice for a more filling meal.

They are also great served with french fries, chicken wings, or even creamy mac and cheese.

Because they are nice and small, they are perfect for after-school snacks and the ideal size for adding to an appetizer platter.

Top tips & FAQS

  • Lining the baking sheet with parchment paper will make releasing the pizza from the pan easier, especially if the cheese oozes off the pizza.
  • If the cheese isn’t browning, you can turn on the broiler for a minute or two. Be sure to watch closely as they can quickly burn.
  • Make sure they are completely cooled before moving leftovers to a container, or they will stick together.
Can I use Pillsbury Grands biscuits for mini-pizzas?

  • 1 tube refrigerated biscuits 10 biscuits
  • ½ cup pizza sauce
  • ½ cup pepperoni slices or ham
  • 1 cup shredded mozzerella cheese

Instructions

  • Preheat oven to 400°F.
  • Open the tube of biscuits, and on a piece of parchment or waxed paper, flatten each biscuit using your hands, or a rolling pin.
  • Move the flattened biscuits to a parchment lined baking sheet, leaving a bit of room for them to spread.
  • Add approximately one tablespoon of sauce to each biscuit.
  • Add the topping of your choice, and then add the shredded cheese.
  • Bake for 12-15 minutes until golden brown and bubbly.
