Turnovers are a great dessert or snack, perfect for grab-and-go breakfast or tossing in a lunch box. We like to add them to a dessert platter with other pastry desserts such as Cranberry Sauce Hand Pies or Homemade Raisin Butter Tarts.

We use frozen puff pastry, which is readily available in most grocery stores and is much easier than making your own. But if you have a puff pastry recipe you love, you can use that instead.

We also chose to use store-bought apple pie filling, but these flaky hand-held desserts can be made with homemade pie filling.

And if you want to take them over the top, try drizzling them with a simple Powdered Sugar Icing after they have cooled!

Puff pastry: You will need 1 pound of frozen puff pastry. This may come in either sheets that have been rolled up in parchment paper or blocks, depending on the brand. Generally packaged in 2 half-pound portions. Either will work fine, with the sheets you simply need to unroll them. If you purchase blocks, you will need to use a rolling pin to roll them into sheets before use. You can also use homemade puff pastry if you have a favorite recipe.

Apple pie filling: We use store-bought apple pie filling for this recipe. This comes in cans which you can find in the baking section of the grocery store. Around the holidays, you may be able to find fresh apple pie filling in the bakery section. You can also make homemade filling if you prefer.

Egg: Egg is used to brush over the turnovers, giving them a glossy golden finish and helping the sugar and cinnamon mix stick to the turnovers. Heavy cream will work in place of the egg if you have an egg allergy.

Granulated sugar: Regular granulated sugar gives the pastry a crunchy, sweet finish. You can use coarse sugar instead for more texture if you can find it.

Cinnamon: You can never have too much cinnamon with apple pie. A little bit of cinnamon mixed with sugar gives these pies the perfect finish. You can change it up by using apple pie spice instead of cinnamon, or a blend of cinnamon, nutmeg, and cloves.

Using Puff Pastry

Frozen, store-bought puff pastry may come in either block or rolled sheets, depending on the brand. Generally, they are sold in approximately one-pound packages that have been divided into two portions.

It is important to keep puff pastry cold until you are ready to use it. You want it to be thawed, but still chilled when you roll it.

When rolling blocks of puff pastry, you may need to add a small amount of flour to the surface to prevent it from sticking to the rolling pin, but be careful not to add too much as it will change the texture of the pastry.

Once the apple turnovers are formed, place any that don’t fit in the basket on a baking sheet in the refrigerator until you are ready to bake. The pastry must stay cold before baking or they will not puff properly.

Storing Apple Turnovers

Apple turnovers can be stored in an airtight container at room temperature for 2-3 days, or in the refrigerator for up to a week.

They may be stored in an airtight container in the freezer for several months.

After the first day, apple turnovers may not be as crispy. They are still delicious, but you can re-crisp them by popping them in the air fryer at 350°F for 1-2 minutes.

Ingredients

  • 1 pound frozen puff pastry thawed
  • 21 oz apple pie filling
  • 1 large egg
  • 2 tablespoon granulated sugar
  • ½ teaspoon ground cinnamon

Instructions

  • Roll the puff pastry sheets into a 12×12 square, then cut each into six rectangles with a sharp knife or pizza cutter.
  • Add about 2 tablespoons of apple pie filling to one end of each rectangle, then fold the other end over the filling.
  • Crimp the edges of the folded turnover with a fork. Poke a few holes, or cut a few slits in the top of each turnover.
  • In a small bowl, beat the egg, then lightly brush over the turnovers.
  • Mix the cinnamon and sugar in a small bowl, then sprinkle over the turnovers.
  • Place the turnovers in a single layer in the air fryer basket.
Place any turnovers that don't fit on a baking sheet and place in the refrigerator until ready to bake.
  • Place the basket in the air fryer and coot at 320°F for 15-17 minutes, or until the pastry is puffed, golden brown, and sounds crispy if you lightly rub a knife over the surface.
  • Remove from the air fryer and move the turnovers to a cooling rack.

Notes

Puff pastry may come in either rolled sheets, or blocks, depending on brand.  If your puff pastry comes in sheets, you can simply unroll them and cut them into rectangles.  If it comes in blocks, you will need to use a rolling pin to roll it into a 12×12 square, or the size recommended on the package.
