Ingredients & Substitutions

Chicken tenderloins – We like to make this recipe with chicken tenderloins as they are cheap, easy, and cook quickly. But you can make these chicken strips with thinly sliced chicken breast if you prefer.
Eggs – Eggs are important for this recipe for the breading to stick to the chicken. If you are allergic to eggs, you could use buttermilk.
Flour – These chicken strips are double breaded, by first dipping in flour before coating them in the cornflake crumbs. This makes them extra crispy. Gluten-free flour can be used in place of all-purpose if needed.
Cornflake crumbs – We love coating our chicken strips in cornflake crumbs because they are super crispy and have great flavor. If you don’t have cornflake crumbs you can use fine breadcrumbs, panko breadcrumbs, or a mix of the two. Gluten-free cornflakes or breadcrumbs may also be used.
Seasonings – We keep things simple and season these chicken strips with garlic powder, onion powder, and parsley flakes. But you can use any seasoning you like. They are delicious when made with ranch seasoning powder, or you can use other blends such as cajun or garlic and herbs. Or you can simply get creative and use a blend of spices that you have in the pantry such as smoked paprika, chili powder, or simple salt and pepper.

Storing Leftover Chicken Strips
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
They may also be stored in the freezer in an airtight container or ziplock bag. They should keep for several months.
