- Spaghetti squash – I have found a 2-pound squash is the perfect size to fit in my 5.8qt Cosori Air Fryer. You can use a bigger squash if you like, but depending on the size of your basket, you may have to cook half at a time.
- Olive oil – Not all air fryer recipes require oil, but for this recipe I find it is necessary. It will help keep the squash from drying out, it aids in softening the squash faster, and it helps to caramelise and brown the squash, which adds amazing flavor.
- Seasonings – I keep things really simple with oregano, garlic powder, and salt. Feel free to get creative here. There are endless ways you can season your squash.

Instructions
The first thing you need to do is prep the squash.
Using a sharp, heavy knife, carefully slice the squash in half lengthwise.
Then, scoop the seeds and stringy flesh from each half of the squash with a spoon.

Drizzle each half of the squash with some oil and sprinkle the seasoning to coat the edge and inside of each half.
Place the squash, cut side up, in the air fryer basket. Set the air fryer to 360°F and cook the squash for 20-25 minutes. The squash is done when you can poke it with a fork, and it goes in easily with just a bit of resistance.

Pro-Tip: This recipe also tastes great with a sprinkle of parmesan cheese. If you want to add parmesan I suggest you add it at the halfway point, otherwise, it tends to burn.
When the squash is done, remove it from the air fryer and create the noodles by dragging a fork through the length of the squash.
