Easy 15-Minute Pizza Quesadillas
These easy pizza quesadillas are perfect for a quick meal or snack. Ready in just 15 minutes and made with simple ingredients they are a fun alternative to traditional pizza. Made with flour tortillas filled with pizza sauce and mozzarella cheese, they are easily customizable using any of your favorite pizza toppings. They can be cooked in a skillet on the stovetop or outdoors on a Blackstone Griddle.

A quick and easy weeknight meal, pizza quesadillas come together with just a few ingredients and are ready in 15 minutes. With crispy tortillas and cheesy pizza filling, they are a meal the whole family will love.
Serve them alone or with a plate of Air Fryer French Fries to complete the meal.
We love making quesadillas for a quick meal because they can be made with just a few ingredients and are on the table in under 15 minutes.
Because they are so fast, we sometimes make them for quick snacks too.
Pizza quesadillas are a fun option when you crave pizza but don’t have time to make it and don’t feel like ordering out.
You only need a flour tortilla, some pizza sauce, shredded cheese, and a few fillings. We often use sliced pepperoni or leftover ham, but chopped bacon, diced bell peppers, and tomatoes are all great choices too.
This is one of those meals we love because you don’t have to be precise with any of the measurements. The recipe is more of a suggestion and you can add as much sauce, cheese, and filling as you like.
They can be made on the stovetop in a skillet, or on an electric griddle and if you feel like cooking outdoors, these are perfect for the Blackstone Griddle, especially if you want to make a large batch.
You can serve them as is, but we usually like to serve them with an extra dish of pizza sauce or ranch dip. Especially if you decide to serve them as wedges on an appetizer platter.
Leftovers store well in the refrigerator and can be enjoyed hot or cold, making them perfect for tossing in the lunchbox.
When reheating we like to use the air fryer for a couple of minutes, but you can also reheat them in a skillet.

Ingredients & Substitutions

Flour tortillas – While we use 10-inch tortillas for quesadillas, you can use any size. Flour tortillas work best as they are pliable and easy to work with without preheating them. White flour or whole wheat flour tortillas can be used; if needed, you can also use gluten-free tortillas.
Cheese – We recommend using freshly shredded pizza mozzarella for these quesadillas, but you can use almost any cheese that you like. A blend of cheddar and Monterey Jack is nice, but you can Swiss, marble, or any combination you have on hand. While normally we recommend using freshly shredded cheese, pre-shredded cheese will work fine for this recipe.
Pizza Sauce – Most often we use store-bought pizza sauce for this recipe as it is quick and easy. You can buy it in jars, cans, or squeeze bottles. Homemade pizza sauce can also be used and our favorite is Roasted Cherry Tomato Pizza Sauce.
Optional fillings – While we’ve kept these simple using pepperoni, you can get as creative as you like. Additional fillings such as bacon, diced tomatoes, bell peppers, or red onion are all great choices.
Assembling the Quesadillas
To assemble your quesadilla, spread a thin layer of butter on one side of the tortilla, then flip it over to fill it.
Spread the sauce over the whole tortilla, then sprinkle cheese on one half of the tortilla, followed by your toppings, and finally another layer of cheese, then fold the other half of the tortilla over the filling.
Now you can cook the quesadilla using your preferred method; you can use a skillet on the stovetop, and electric griddle, or cook them outdoors on a Blackstone griddle.

Blackstone Griddle Pizza Quesadillas
Cooking quesadillas on a Blackstone Griddle is quick and easy. Because of the large surface, it’s a great way to cook a large batch at one time.
Heat the griddle to medium heat, then place the prepared quesadillas on the surface. If you have a lid on your griddle, close the lid, this will help trap the heat allowing the cheese to melt faster.
Cook the quesadillas for 4-5 minutes, checking to make sure the bottom isn’t getting too crispy. Once they are golden brown, flip them using a metal spatula and cook for another 2-3 minutes until crispy and golden brown and the cheese is melted.
Remove from the griddle, slice, and serve.
Storing Leftover Quesadillas
Leftover quesadillas can be stored in an airtight container in the refrigerator for up to 3 days.
They can be enjoyed cold, or you can reheat them in a skillet over medium heat, or pop them into the air fryer at 350° F for 2-3 minutes.

Easy Pizza Quesadillas
Ingredients
- 2 10-inch flour tortillas
- 1/4 cup pizza sauce
- 2 cups shredded mozzarella cheese
- 1/2 cup sliced pepperoni
- butter or cooking oil spray
Instructions
- Heat a 10 or 12-inch skillet to medium heat.
- Spread a thin layer of butter, or spray with a small amount of cooking oil, on one side of the tortilla.
- Flip the tortilla over, spread sauce over the whole tortilla, then sprinkle one half with cheese, followed by the toppings, and then a second layer of cheese.
- Fold the empty half of the tortilla over the filled half.
- Place the folded quesadilla into the skillet and cook for about 5 minutes until the bottom is golden brown.
- Carefully flip the quesadilla and cook for another 3-4 minutes until both sides are golden brown and the cheese is melted.
- Remove from the skillet, slice, and serve.
