Bacon and Cheese Quesadillas

Bacon and cheese quesadillas are an easy meal or snack that can be on the table in about 15 minutes. To create this tasty and simple meal, you only need some flour tortillas, shredded cheese, and cooked bacon. They can be cooked in a skillet on the stovetop or outdoors on a Blackstone Griddle.

Cheese and Bacon quesadillas are a super easy meal or snack; they only take minutes to prepare, and you only need a few ingredients. Serve them on their own, or pair them with some easy sides.

During busy weeknights, it’s always nice to have some dinner options that can be prepared and on the table fast.

These bacon quesadillas are the perfect choice. Made with only three ingredients, they are simple to prepare, and you can have them on the table in about 15 minutes.

And they don’t have to be served just as a meal. These tasty cheese-filled tortillas are also great as a snack or an appetizer.

Filled with bacon and cheese, these are just like grilled cheese sandwiches but made with flour tortillas instead of bread. They are family-friendly and can be easily customized with additional fillings depending on your preference.

While we often keep them simple, adding diced tomatoes, bell peppers, and red or green onions, are all great choices. You can also add sauces such as ranch dressing, BBQ sauce, or pizza sauce.

The nice thing about this recipe is that you don’t need to be precise. You can fill them with as much or as little as you like. If you like less cheese, that’s no problem, and if you can never have enough, you can stuff it full.

We like to serve them with dips such as sour cream, ranch, and Sour Cream and Chive Dip. You could also add Honey Mustard Sauce or even Burger Sauce.

There are a variety of options for cooking quesadillas, and while in a skillet on the stovetop is most common, you can also use an electric griddle if you have one, or outdoors on a Blackstone Griddle, which is especially handy for larger batches.

They can be served on their own, especially if you are making them as a snack. But if you want a more complete meal, a side of french fries or a simple salad are great options.

Flour tortillas While we use 10-inch tortillas for quesadillas, you can use any size. Flour tortillas work best as they are pliable and easy to work with without preheating them. White flour or whole wheat flour tortillas can be used; if needed, you can also use gluten-free tortillas.

Cheese – You can use almost any cheese that you like for these quesadillas. We like to use a blend of cheddar and Monterey Jack, but you can use mozzarella, swiss, marble, or any combination you have on hand. While normally we recommend using freshly shredded cheese, pre-shredded cheese will work fine for this recipe, and cheddar blends, tex mex, or pizza mozzarella are all great choices.

Bacon – To fill these quesadillas, you will need cooked bacon. You will want 2-3 slices for each quesadilla, or more if you choose. We like to use thick-cut bacon, but any type will work fine. If you don’t have bacon, leftover ham is a great choice. Turkey bacon may also be used if you don’t like pork bacon.

Optional fillings – While we’ve kept these simple, you can get as creative as you like. Additional fillings such as diced tomatoes, bell peppers, or red onion are all great choices. You can also add sauces such as ranch dressing, BBQ sauce, or pizza sauce.

Assembling Quesadillas

To assemble your quesadilla, spread a thin layer of butter on one side of the tortilla, then flip it over to fill it.

Sprinkle cheese on one half of the tortilla, followed by chopped bacon and finally another layer of cheese, then fold the other half of the tortilla over the filling.

Now you can cook the quesadilla using your preferred method; you can use a skillet on the stovetop, and electric griddle, or cook them outdoors on a Blackstone griddle.

Blackstone Griddle Bacon Quesadillas

Cooking quesadillas on a Blackstone Griddle is quick and easy. Because of the large surface, it’s a great way to cook a large batch at one time.

Heat the griddle to medium heat, then place the prepared quesadillas on the surface. If you have a lid on your griddle, close the lid, this will help trap the heat allowing the cheese to melt faster.

Cook the quesadillas for 4-5 minutes, checking to make sure the bottom isn’t getting too crispy. Once they are golden brown, flip them using a metal spatula and cook for another 2-3 minutes until golden brown and the cheese is melted.

Remove from the griddle, slice, and serve.

Storing Leftovers

Leftover quesadillas can be stored in an airtight container in the refrigerator for up to 3 days.

They can be enjoyed cold, or you can reheat them in a skillet over medium heat, or pop them into the air fryer at 350° F for 2-3 minutes.

Top Tips & Tricks

  • Don’t use high heat. You want to cook quesadillas over medium heat to avoid burning the tortillas before the cheese has time to melt.
  • To help the quesadillas hold together, be sure to fill them with a layer of cheese, followed by the other toppings, and a second layer of cheese.

Easy Cheesy Bacon Quesadillas

Ingredients

  • 2 10-inch flour tortillas
  • 2 cups shredded cheese cheddar, Monteray jack, or mozzerella
  • 4 slices cooked bacon chopped
  • Butter or cooking oil spray

Instructions

  • Heat a 10 or 12-inch skillet to medium heat.
  • Spread a thin layer of butter, or spray with a small amount of cooking oil, on one side of the tortilla.
  • Flip the tortilla over, and sprinkle one half with cheese, then chopped bacon, and then a second layer of cheese.
  • Fold the empty half of the tortilla over the filled half.
  • Place the folded quesadilla into the skillet and cook for about 5 minutes until the bottom is golden brown.
  • Carefully flip the quesadilla and cook for another 3-4 minutes until both sides are golden brown and the cheese is melted.
  • Remove from the skillet, slice, and serve.
