Making garlic bread on the griddle top is a quick and easy way to add a flavorful side to your next backyard BBQ.  

This is a great choice to serve with steak, grilled lemon chicken, and chicken pasta Caesar salad using flavorful homemade garlic butter and parmesan cheese.

We always love a side of bread, rolls, or biscuits with our meals, especially when cooking outdoors, and this tasty grilling recipe is perfect.

Cooked on the flat-top grill, the bread gets a nice crispy crust while maintaining a soft, chewy middle.

It takes only minutes to cook, so you can toss it on the grill at the end and serve it hot.   

We like to use French bread when making garlic bread as it has a great texture and absorbs melted garlic butter nicely, but you can use any bread you have on hand.  

You can make homemade bread or use store-bought, and you can even use hamburger or hot dog buns.

We make a savory garlic butter using softened butter, fresh garlic and herbs, but you can also use other compound butter such as Roasted Garlic Compound Butter, or a delicious Garlic Chive Butter.

You only need a few ingredients to make delicious garlic bread.

Bread – You can use any bread you like, but French bread is a great choice because it is crusty on the outside, soft in the middle and holds up well to grilling. If you don’t have French Bread, try using Italian baguettes, ciabatta bread, focaccia, or you can even use hamburger or hot dog buns.

Butter – Our preference is salted butter, but unsalted can be used. You can substitute it with margarine if you prefer.

Olive oil – We like to add a bit of olive oil to our garlic butter as it makes is smoother and easier to spread. This is optional, and you can omit it if you don’t like the flavor it adds.

Garlic—Of course, garlic is essential to making garlic bread. We choose fresh garlic for this recipe, but you can use powder or granulated garlic if you like.

Herbs – Dried herbs are great in garlic bread as they add another layer of flavor. For this recipe, we’ve kept is simple with dried parsley, but it is also delicious with oregano or chives.

Grated parmesan cheese – Garlic bread is fantastic with a bit of cheese. We use grated parmesan and mix it with the butter, but if you want to use freshly shredded cheese, you can leave it out of the butter and sprinkle it on the top of the bread after you flip it. We like using freshly shredded parmesan, asiago, or Romano.

Step by Step Instructions

Mix the butter, olive oil, parmesan cheese, garlic, and herbs in a small bowl.  This works best if you start with room temperature butter.

Preheat the griddle to medium heat.

While the grill is preheating, slice the bread and spread each half with the garlic butter mixture.

Pro Tip: Ensure the butter is softened or at room temperature before starting. This will make it much easier to mix and spread.

Place the bread on the griddle with the butter side down, and cook for 3-4 minutes until the butter is melted and the bread has some golden brown spots.

Flip the bread over and let the bottom of the bread heat for 2-3 minutes.  If you have a lid on your griddle, you can close it.  This will help the bread heat through and keep the middle softer, if not you can use a dome, if you have one, or skip this step.

Blackstone Griddle—We love our Blackstone Griddle. It makes it easy to cook many things outdoors, and the flat top gives us more options than our standard gas or charcoal grill. We often use them together to create our meal.

If you don’t have a Blackstone, you can use a cast iron griddle that fits on your regular grill, which is what we used for a long time before getting our Blackstone.

Bread knife – A good bread knife is a kitchen staple and makes slicing the bread, without squishing or tearing it, so much easier.

Storage

Leftovers can be stored in an airtight container or ziplock bag for a couple of days.

We’ve never found the need to refrigerate leftovers, but if you are concerned, you can.

Leftover garlic bread can be reheated in the oven, microwave, or air fryer, or you can pop it back on the Blackstone for a few minutes.

Top Tips & Tricks

  • Use a medium heat for this recipe to allow the bread to toast without burning.
  • If you have a lid on your Blackstone, close it after you flip the bread to help it warm through and keep the middle soft. You can also use a dome.
  • Add a sprinkle of shredded cheese to the top of the bread after flipping to make a delicious cheesy garlic bread.

Ingredients

  • ½ loaf French bread
  • ½ cup salted butter softened
  • 1 tablespoon olive oil
  • 2-3 cloves garlic crushed or minced
  • 2 teaspoon dried parsley
  • ¼ cup grated parmesan cheese

Instructions

  • Preheat the griddle to medium heat.
  • In a small bowl, mix the softened butter, olive oil, garlic, herbs, and parmesan cheese.
  • Slice the bread open and spread butter on each half.
  • Place the bread butter side down on the hot griddle, and cook for 3-4 minutes until the butter is melted and the bread is golden brown.
  • Flip the bread over and heat for another 2-3 minutes to warm and toast the crust side. If your griddle has a lid, closing the lid will help warm the bread through and keep the middle soft. You can also use a dome.
  • Remove the bread from the griddle when it is toasted to your liking, slice and serve.

Notes

Scale this recipe up or down as needed, depending on how many people you feed.  Half of a French Bread loaf should feed 4 people giving 2 slices of garlic bread each.
If you like, add some shredded cheese after you have flipped the garlic bread.  Use the lid of the griddle, or a dome, to hold the heat in and melt the cheese.
