Why we love this recipe:
I love having a few jars of flavored mayonnaise in the refrigerator.
These simple condiments have many uses, from a dipping sauce, to a sandwich spread, and can be made in almost any flavor to suit any meal.
Flavored mayos such as this are sometimes referred to as aioli, and while they are not quite the same as a true aioli, and I like to think of these flavored mayos made with prepared store-bought mayo as a cheater aioli.
However, if you are feeling more ambitious, you can certainly make your own homemade mayonnaise too.
This dill aioli recipe, or mayo, has a creamy texture and bright flavor from the fresh dill weed and lemon juice.
If you love a lot of lemon flavor, you can increase the intensity by adding a bit of lemon zest. Just be sure you add the bright yellow part of the rind only and avoid the white pith or you will end up with a bitter flavor.
We love using this lemon dill sauce recipe with breaded shrimp, salmon, or crab cakes. It is a great condiment to add extra flavor to Deviled Eggs or can be used as a dip for veggie sticks. It is also a delicious spread on my favourite shrimp salad sandwiches.

This easy recipe comes together with just five ingredients.
Mayonnaise – Choose your favorite brand of store-bought mayonnaise. You can use full-fat, low-fat, or even fat-free mayonnaise. If you have a favorite recipe for homemade mayonnaise, you could also use that.
Dill – This recipe is made with fresh dill. Fresh will have a much more intense flavor than dried dill, and using dried can produce a gritty textured mayo. When fresh herbs, choose ones that are bright green and fragrant. While we use about ¼ cup of fresh dill, you can use any amount of dill you like depending on how much flavor you want.
Lemon juice – For the best flavor, be sure to use fresh lemon juice in this recipe. If you want to increase the intensity of the lemon without making the mayo too runny, you can add some fresh lemon zest. Just be sure you are zesting the bright yellow parts of the rind only as the white pith will make the mayonnaise bitter.
Optional Ingredients
Add a little garlic if you want to make this a garlic dill aioli, you could use a small clove of fresh, or a teaspoon of garlic powder.
Add a bit of black pepper if you want to add a bit of spice.
A teaspoon or two of dijon mustard will add some extra acidity and spice and goes especially well with chicken dishes.

Storing Dill Mayonnaise
You can store homemade lemon dill mayonnaise in an air-tight container in the refrigerator. It should keep well for about ten days.
Small mason jars work very well for this.
If you use homemade mayonnaise rather than prepared, store-bought mayonnaise as the base for this recipe, storage time may be reduced.

Do you mean dried dill? You can use dried, but as indicated in the ingredients and substitutions section of the post, dried dill can leave a gritty texture to the mayo.
