They start with a soft flour tortilla, spread with spicy, creamy buffalo chicken mixture, and are balanced with the flavor of fresh chives.
These roll-ups are easy to customize by using different cheeses and your favorite hot sauce. You can even add extras like crumbled bacon, diced peppers, lettuce, or chopped tomatoes.

Flour tortillas – This recipe works best with flour tortillas, as they are softer and more pliable than corn tortillas, which tend to split when rolled. You can use white or whole wheat tortillas. We recommend using 10-inch tortillas, but smaller tortillas will work just as well.
Chicken – You need cooked chicken for this recipe. You can use shredded or diced. Store-bought rotisserie chicken works well for this recipe. You can also use canned chicken.
Cream cheese – Either softened brick cream cheese or spreadable cream cheese works fine for this recipe. You can use regular, low-fat, or light. Plain is best, but we have also made this recipe with flavors such as herbs and garlic.
Cheese – We like adding sharp cheddar to our buffalo roll-ups, but we have also made them with mild cheddar, Monterey Jack, pepper Jack, or marble. While normally we suggest shredding your own cheese, this recipe is fine with pre-shredded cheese, and flavors such as Tex-Mex, cheddar blend, or Italian work well.
Hot sauce – Our favorite is Frank’s Red Hot, but you can use whatever hot sauce you like. You can use a plain hot sauce or a premade buffalo wing sauce.

Step by Step Instructions
Add the chicken, cream cheese, hot sauce, cheddar cheese, and chives to a large bowl and mix until well combined.
Spread the mixture over each tortilla.

Roll the tortilla up to form a log and slice into 8 pieces.
Serve as desired with ranch, blue cheese dip, or extra hot sauce.
