Buffalo Chicken Flatbread Pizza

This easy buffalo chicken flatbread pizza combines two of our favorite things; pizza and buffalo wings.  Using leftover rotisserie chicken and store-bought naan bread, these buffalo chicken pizzas come together in minutes, making them perfect for quick dinners.  

Top them with a drizzle of blue cheese or ranch dressing and a sprinkle of green onions, and serve them with your favorite dip for an easy dinner full of flavor.

A quick and easy meal for busy weeknights, this buffalo chicken pizza comes together with simple ingredients.  The preparation is quick and easy. It is made on a flatbread crust using pre-cooked chicken. 

It’s even better when served with homemade blue cheese dip or ranch dressing.

If you love buffalo wings and pizza, you will love this buffalo chicken flatbread.

This recipe is incredibly quick and easy.  The pizza crust is made with store-bought flatbread.  You can use any flatbread you like: pita bread, naan bread, or even small pizza crusts.  You can use English muffins, bagels, or even French bread slices if you want mini versions.

The crust is topped with a spicy buffalo sauce, then with cooked chicken and a combination of cheese.  We like shredded mozzarella and blue cheese crumbles, but you can use cheddar cheese, Monterey Jack, or any combination you like.

These little naan pizzas are great for busy weeknights as they come together quickly with little preparation.  You can have them on the table in less than 30 minutes, and there isn’t much cleanup.  

They are also a great game day appetizer with spicy wings, such as Habanero Chicken Wings, Hot Cheese Dip, or Baked Cheeseburger Egg Rolls.

The great thing about this recipe is that it’s super easy. You don’t have to be specific with any of the measurements, and you can adapt it to use whatever ingredients you have on hand.

If you don’t have flatbread, you can use a different crust, and if you don’t have shredded mozzarella cheese, you can use any combination of cheese that you like. Use the recipe as a suggestion and have fun with it.

Flatbread – You will need pre-made flatbread.  Any type will work, naan bread, pita bread, or small pizza crusts are all good choices.  Store-bought is fine, but if you have a favorite recipe for homemade flatbread, you can use that too.  You can use raw pizza dough for this recipe as well. However, it will take longer to bake than when using pre-baked flatbread.

Chicken – This recipe uses pre-cooked chicken.  You can use leftover chicken breasts or shredded rotisserie chicken or pre-cook some chicken in the Instant pot or slow cooker.

Hot Sauce – Frank’s Red Hot is our choice for hot sauce.  The hot sauce is combined with blue cheese dressing to make a thicker, creamier sauce.  But feel free to use your favorite buffalo sauce or you can use homemade buffalo sauce.  You can add different hot sauces depending on how spicy you like it.  You will want enough to spread on the pizza crust, along with some extra buffalo sauce to drizzle on top of the pizza before serving.  If you like your pizza sauce extra creamy, you can mix a bit of cream cheese with the buffalo sauce before spreading it on the pizza.

Creamy Dressing – You will want a creamy blue cheese or ranch dressing.  Blue cheese is our choice, but if you don’t like the strong flavor of blue cheese, then ranch will work just fine.  Choose your favorite store-bought, or make your own.

Cheese – You can’t go wrong with any cheese you choose.  Mozzarella is a good choice because it melts well, but cheddar, swiss, and Monterey Jack cheese all work well, along with some crumbles of blue cheese.

This delicious flatbread can be kept simple, or you can dress it up with additional toppings.  Some choices we like are sliced green onion, diced red onions, or sliced bell peppers.

Step by Step Instructions

In a small bowl, mix the hot sauce and blue cheese or ranch dressing.

In a separate bowl, mix the chicken with half of the hot sauce mixture. 

Place the flatbread on a baking sheet or pizza stone, then spread the remaining sauce over the two flatbreads.  

Top each flatbread with half the chicken, then half of the shredded cheese.  Add a sprinkle of crumbled blue cheese if desired.

Bake at 375°F for 10-15 minutes until the cheese is melted and bubbly.

Remove from the oven and serve with a drizzle of blue cheese dressing, hot sauce, and a sprinkle of green onion.  Serve with additional blue cheese or ranch dressing for dipping, if desired.

Serving Suggestions

This homemade flatbread pizza can be served as a meal for a quick lunch or dinner, or it can be served as an appetizer or snack.

You can serve it alongside other appetizers with buffalo flavors, such as buffalo chicken wings, buffalo turkey meatballs, or a platter of buffalo chicken totchos.  

It is the perfect snack or appetizer for football season to serve up at a game-day party, or any time you want to serve some quick and easy snacks.  

You can make them a different size by choosing smaller flatbreads or just slicing them into wedges and putting them on a platter. 

For an easy weeknight dinner, you can keep things simple and serve it on its own, or you can whip up a quick salad or basket of Air Fryer French Fries if you want something with it.

Top tips & FAQS

  • Store-bought rotisserie chicken works great for this recipe if you don’t have any cooked chicken already on hand.
  • If you don’t like blue cheese dressing, you can use ranch instead. Or mix some cream cheese with the hot sauce to make it thicker and cheesier tasting.
  • Use any flatbread you like; naan, pita, and even mini pizza shells will work well.
